Our summer send-off sweepstakes winner submitted a handy trick for grilling perfect chicken breasts every time. 

To make your own chicken paillard, simply place a skinless chicken breast fillet between two large sheets of plastic or cling film and pound firmly and evenly with a meat mallet, tenderizer or rolling pin. Continue to evenly pound the chicken until it has flattened out into a uniform thin escalope. This is your paillard.

Why go to the trouble of flattening out a chicken breast fillet? Well, this process tenderizes the meat and also makes it cook very quickly and evenly, so is great for a reliable speedy meal.
